Rías Baixas is Albariño country — but not all Albariño is created equal, and not all of Rías Baixas is the same place. Soutomaior is the smallest of the appellation's five sub-zones, a mountainside valley on the banks of the Verdugo River where sand over granite gives the wines a precision and stony nerve that sets them apart. Noelia Calvar and Simón Barcia farm seven acres on a south-facing slope, harvesting by hand and aging on lees in stainless steel for four months — long enough to build texture and presence without sacrificing the bright orchard fruit and honeysuckle that make this one of the most immediately captivating Albariños in the appellation. Terrestoria has been pouring it since 2017 — our very first shipment to Utah — and it has since found an enthusiastic following among consumers and a place on the state's most mindfully curated wine lists. Some wines earn their place in a portfolio for life.
