The Valle d'Itria is a limestone plateau in the heel of Italy's boot — well-ventilated, ancient, and home to varieties that most of the wine world has yet to discover. Silos is Lasorte Cuadra's ancestral field blend of four of them: Verdeca, Bianco d'Alessano, Minutolo, and Maresco, grown on the region's characteristic red calcareous clay and harvested by hand. Skin maceration, temperature-controlled fermentation, and extended lees aging in a single 50-hL vat — the vessel the wine is named after — deliver something simultaneously precise and deeply regional. Savory, mineral, and built for the table, it follows an aging curve closer to white Rhône than anything you'd expect from Puglia. Lasorte Cuadra holds each vintage for two and a half to three years before release, and keeps back a third of annual production for deeper cellaring still. Patience is the point.
