The soul of this vermouth is its base wine, Silos—Lasorte Cuadra's field blend of Puglian white varieties including Verdeca, Bianco d'Alessano, Minutolo and Maresco. Taken to Antica Distilleria Quaglia in Piedmont, one of Italy's most respected historic distilleries, the wine is blended with a medley of 23 botanical infusions. Epopira is made in two expressions: Dry and Dolce. At 140 g/L, the Dolce allows thyme, bay leaf, chamomile, rosemary and Valle d'Itria saffron to express themselves in a generous and enveloping register, leading into a long and lingering finish. As compelling on its own, poured over ice, as it is at the heart of a Negroni or Manhattan, or combined with the Dry in an Epopira Perfetto. The apothecary bottle, adorned with artist Vanda Focanti's portrait of the Physician Saints Cosmas and Damian, is as intentional as its delicious contents. 1,200 bottles made.
