The Valle d'Itria has always been white wine country — a plateau of limestone trulli and ancient vines where Verdeca and Minutolo have been grown long before anyone thought to put them in a box. LI QUI DO Bianco, made in partnership with UPAL Cantina Sociale di Cisternino, the last surviving wine cooperative in the region, brings both varieties together in a crisp, easy-drinking blend that is exactly what it needs to be at 12% ABV — refreshing, unfussy, and quietly distinctive. Stainless steel aging keeps the aromatics of Minutolo, one of Puglia's most characterful indigenous whites, front and center. The cooperative's agro-ecological farming practices, passed down through generations, are what give a wine this straightforward its sense of place.
